Our Commitment to Safety
Funabiki Shoten is committed to product safety, and we work closely with local governing bodies to ensure that our products pose no dangers to consumers. We have a strict food safety program in place (HACCP), and we regularly test our products and ingredients to ensure they meet the highest standards. We also work closely with package manufacturing companies to guarantee that we're using the latest and safest manufacturing technologies. As the world continues to evolve around us, we strive to grow employee and customer food safety and product safety knowledge.
Our Process

0. Harvesting
Oysters are landed early in the morning and shucked the same day.

1. Shucking
Each oyster is carefully shucked by hand and immediately stored in cold, sterilized seawater.

2. Shipping
Several times a day oysters are delivered in refrigerated trucks to the processing plant within an hour of weighing.

3. Cleaning
Oysters are washed thoroughly in sterile, cooled seawater and then sorted by size and quality.

4. Packaging
Packages are produced quickly by computerized weighing packaging machines and checked for contaminants before shipping.
Quality Control
In order to ensure the safe consumption of our products, packs are labeled as follows. (Please see the circled areas on the example packages below.)

Lot number In the case of recalls due to mechanical or human error or problems in the sea area where the product was collected, the products are grouped together and divided into easily identifiable lots.
*Please consume before the expiration date as it is a perishable product. Although the oysters have been sterilized and cleaned, there is the possibility that oyster shells, dirt, etc. may be attached to the shells due to their natural environment. Please remove them when washing.
Environmental Considerations
Our commitment to the environment extends to how our food is packaged. Rather than using conventional aluminum tube clips, we make use of plastic clips, which means that the packs in which oysters are delivered can be more easily disposed of. With no metal in the packaging, it is easier to check that none of our products contain any metal.
HACCP Certification
HACCP certification is a food safety program that is recognized by the FDA. It is a preventative approach to food safety that is based on seven principles. These principles are designed to help identify and control food safety hazards. Our customers benefit from HACCP certification because it assures them that our food safety practices are up to par. It also allows us to quickly identify and correct any food safety issues that may arise."
